Which lavish Russian dessert is built by baking semolina in layers separated by caramelised skins lifted one by one from slowly baked cream, with nuts and fruit between them?

Named after Count Dmitry Guryev, finance minister under Alexander I; most accounts credit the recipe to Zakhar Kuzmin, a serf cook Guryev acquired after tasting it. Alexander III is said to have been served it moments before the Borki train crash of 1888.
